Harvest: third decade of August (Chardonnay); third decade of September (Greco and Mantonico). The grapes are selected and hand-picked.
Vinification: After removing the stalks, the grapes go through a process of criomaceration and soft pressing. The most is then injected with selected yeasts and the fermentation continues in barriques.
Refinement: At the end of the alcoholic fermentation, the wine is racked and left in stainless steel tanks for 2-3 months. After bottling, the wine refines for a month before being put up for sale.
Organoleptic characteristics: straw-coloured yellow, bright, elegant and persistent bouquet with notes of tropical fruits. Dry, well structured and lovely balanced with an elaborate aftertaste.
